Ingredients

  • 450 g eggplants
  • 1 tablespoon salt
  • 40 g rice bran oil (or preferred oil)
  • 1 heaped teaspoon whole mustard seeds
  • 3/4 teaspoon ground ginger
  • 1 brown onion
  • 4 clove garlic
  • 1/4 to 1/2 teaspoon cayenne pepper (depending on taste)
  • 3/4 teaspoon tumeric
  • 3/4 teaspoon ground cumin
  • 3/4 teaspoon garam masala
  • 150 g water
  • 2 heaped teaspoons tomato paste
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt

Recipe's preparation

  1. 1. Cut eggplants into 1 inch pieces. Skin can be kept on if preferred.

    2. Place eggplants into strainer and coat lightly with salt. Place a plate over the eggplant and a heavy object on top in order to help drain out the excess water. Leave for at least 30 mins.

    3. Place onion and garlic in bowl and chop on spd 5 for 3 secs. Scrape sides of bowl.

    4. Add oil and saute for for 3 mins, 100C and spd 1. 

    5. Add ginger and mustard seeds. Cook for 3 mins, 100C and spd 1. 

    6. Add the rest of the spices and cook for a further 2 mins, 90C and spd 1. 

    7. Add water and tomato paste, cooking for a further 7 mins, on 100C and spd 1. 

    8. Strain and squeeze any excess water from eggplant and place into the bowl. Mix contents on Reverse, for 5 secs on spd 1.5.

    9. Cook on Reverse, 15 mins, 100C and spd 1. 

    10. Serve with rice, on bread, wraps, or even as a dip.
