Ingredients
- 2 cans Black Beans, Drained, but not rinsed
- 1 --- brown onion, quartered
- 2 cloves garlic, peeled
- 1-2 red or green chili, deseeded for less heat, leave seeds for more heat
- 2 tomatoes, quartered
- 2 tablespoons TM Veggie Stock
- 2 teaspoons ground cumin
- 2 teaspoons Ground Coriander
- 1 lime, juiced
- 1 avocado, sliced
- 1/2 bunch fresh coriander/cilantro

Drain Black Beans in steam basket and let sit until needed.
Add onion, garlic and chili to Thermomix bowl "Closed lid" and chop5sec/speed 5-6.
- Option- add a handful of fresh coriander/cilantro to onion, garlic and chili mix if you like the herb flavor as much as I do.
Scrape down sides of bowl, then add veggie stock, 2 tbsp water and saute3min/100/speed 1.
Add tomatoes, cumin and coriander, then chop 5sec/speed 5-6. Scrape down sides of bowl, then saute 1min/100/speed 1.
Add half of the drained black beans to bowl and chop 5-6sec/speed 5, scrape down sides of bowl then add the remaining black beans and enough water to cover the beans.
Cook 20mins/100/"Counter-clockwise operation" speed 1.
Garnish with fresh lime juice, avocado, slices and fresh coriander.
Option- serve with blue corn chips or whole wheat tortillas.

This recipe is just divine. You can add more or less water to change it from a soup to a dip. Thanks for a great recipe
Great flavours, very healthy dish. Sautéed with oil rather than water. Made with less water as had it with eggs for breakfast rather than as a soup.
Excellent very tasty and easy both my partner and i enjoyed it very much will make again.
