Ingredients

  • 3CM fresh ginger, peeled
  • 1 clove garlic, peeled
  • 1 long Asian Eggplant, cut into rounds
  • 1 carrot, roughly chopped
  • 1/2 red capsicum, in 3 pieces
  • 1 Medium Cauliflower
  • 20g coconut oil
  • 3 stalks kale, stripped and roughly chopped
  • 2 tbsp tamari
  • handful of raw cashews
  • Salt & pepper to taste

Recipe's preparation

  1. 1.     Place ginger and garlic in Thermomix bowl and chop for 2 sec/speed 6.

    2.     Add the eggplant, carrot and capsicum and chop for 2 sec/speed 5. Scrape down. (I actually hand-chopped the eggplant, carrot and capsium into fine dice just because I just felt like it.)

    3.     Add 1 tablespoon coconut oil. Cook for 10 min/Varoma/Reverse/speed 1. Check eggplant is soft (I hate undercooked eggplant). If soft, turn vegetables into Thermoserver (or into a bowl covered with foil) to keep warm. If still hard, cook for another2 min/Varoma/Reverse/speed 1.

    4.     Break or chop cauliflower into florets, retaining stems. Place in Thermomix bowl (you don’t need to wash the Thermomix bowl after removing the eggplant mixture but scrape it out well). Add the kale (I hand-chopped the kale – you know, just because I felt like it). Chop for 2 sec/speed 5. You are looking for an even rice-sized rubble with the cauliflower; chop for another 2 sec/speed 5 if necessary. Scrape down.

    5.     Add the remaining coconut oil. Cook for 9 min/Varoma/Reverse/speed 1.

    6.     Toss cauliflower mixture with eggplant mixture. Gently stir through tamari. Check seasoning and add salt or more tamari to taste. Scatter with cashews just before serving.

     

    Also feel free to add fresh chilli with the ginger, or with the nuts at the end. Of course, use whichever vegetables you have on hand, and change (or omit) the nuts.

    This fried ‘rice’ can be served as a side dish with grilled meats or as a veg-happy complete meal. Make an omelette to chop and scatter over the top too, if you like.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
