Ingredients
Curry Sauce
- 40 grams ginger, sliced in small coin
- 20 grams garlic cloves, peeled
- 120 grams water, divided 60g & 60 g
- 300 grams onions, peeled and quartered
- 30 grams Ghee
- 1 tablespoon green cardamon pods
- 2 bay leaves
- 6 cloves, whole
- 10 Peppercorns
- 5 centimetres cinnamon stick
- 1 tsp Ground Coriander
- 2 tsp ground cumin
- 1 tablespoon ground red paprika
- chilli, to your liking
- 1 1/2 tsp salt
- 250 gram Greek style yoghurt
- 500 gram desiree potatoes, cubed 3cm
- 500 grams Cauliflour chunks
- 63 grams water
- 1 teaspoon vege stock
- 2 tomatoes, quartered
- 125 grams frozen peas
- 1 tsp garam masala

Place oil and onion in jug cook for 2 mins 120 degrees for 2 mins. Set aside
Mince ginger and garlic speed 9, add 60 grams water and blend 1 min speed 10 - set aside.
Add onions to the ginger mix. Add the tomatoes. Cook for a further 5 mins 100 degrees "Gentle stir setting" ,
Add the whole spices, cardamon pods, bay leaves, cloves, peppercorns, cinnamon stick. cook 3 mins veroma "Gentle stir setting" until fragrant.
Add the ground spices, salt, yoghurt and remaining 60grams water Cook 5mins 90 degrees
Cook potatoes and Cauliflower in water flavoured with the vege stock microwave, or on stove.
Add Garam masala, peas and pepper just befor serving stir in with spatula.
Serve with fragrant rice.

Tip
This looks complicated but is not really.
You can use a jar of Rogan Josh but this recipe is 100 times nicer.
Can use meat instead of veg brown off the meat in a pan, cover with the sauce, place in a slow cooker 100 degrees, 3-5 hours.

Hi, can you please confirm if these whole spices need to be ground? the recipe reads as if I would leave them in while and just interested to know if there's a step missing or not? Thanks
