- 1 garlic clove
- 5 spring onions
- 1 can chick peas, (300g)
- 1 zucchini
- 1 carrot
- 1 handful of herbs, (Basil, Oregano, Tarragon...)
- 1 egg
- 1 cup plain flour

Turn Thermomix onto speed 7 and add each ingredient through the top one at a time (careful to avoid splash using your MC) - Garlic, Spring Onions, Herbs, Chick Peas, Carrot, Zucchini and Carrot.
Turn Thermomix to speed 3 and add egg and plain flour.
Once combined, scoop out about tablespoon size portions into a preheated fry pan (with a little melted butter). Once brown on both sides fritters are ready to serve.
Tip
For a healthy, low carb lunch, I like to serve in a lettuce cup with a little salad and a drizzle of mayonnaise or balsamic vinegar or pear sauce.

Great recipe to use left over Veges. I also added some haloumi, fried some sliced bacon and added it to the mix -Yum.

These were great, tasty, super easy and filling
used onion instead of spring onion (as its all I had) and added in green beans and curry powder too. Next time will also add in some other veggies
I added feta cheese instead of the chickpeas, yum

Just wondering if you drain the can of chickpeas before adding?
Thanks for this recipe skeeta, I did add a bit but it was a great starting ingredient list, I wouldn't have thought of it myself. I added another zucchini, a little more flour, small bunch coriander, pinch cumin, salt & pepper to taste. I fried mine in coconut oil & with my added extras they did take a while to cook but the wait was worth it
I loved the lettuce cup idea, this was a lovely simple, tasty & different meal to the regular. I served them with lightly cooked seasoned green beans, yummo!

I admit, alot of my cooking is very basic as I cater for low salicilate and no amines food.

The kids loved these so that was a massive bonus. I found it a bit bland for my liking so had to sprinkle salt at the end. I might even add some curry powder next time. Thanks
