Ingredients
1 tablespoon Oil
- 1 tablespoon oil
- 1 --- onion, peeled & quartered
- 2 cloves garlic, peeled
- 2.5 cm ginger, peeled
- 1/2 teaspoon chilli powder
- 1 teaspoon Ground Coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 85 gram red lentils, soaked for 1 hour or more
- 250 gram water
- 1 tablespoon vegetable stock
- 1 can 440g 1 tomatoes
- 1 tablespoon coconut milk powder, or some coconut milk
- 2 tomatoes, cut into wedges
- 8 Hard boiled eggs
- sprigs fresh coriander or parsley

Add Onion, garlic and ginger to mixing bowl. Chop 3 sec/speed 7. Add oil, saute 2 min/Varoma/Speed 1. Add Spices, cook 1 min/Varoma/speed 1.
Add Lentils, stock concentrate waer & Tomatoes. Cook 15 min/Varoma/ speed 2.
Slice eggs in half and place in Varoma. Place on top of Thermomix lid, while sauce cooks. Remove from lid, and set aside while completing next step.
Add Coconut milk powder. Mix well. Mix 20 sec/Speed 7-9.
Place Eggs and quartered tomatoes on a plate. Spoon sauce over and sprinkle with chopped Coriander/Parsley.
This can be served on a bed of rice or with a warm Chapatis
Tip
This sauce would also be suitable with Cooked chicken, seafood/fish
