Ingredients

  • 3 tbsp TM vegetable stock concentrate

  • 100 g olive oil
  • 3 medium zucchini, roughly chopped
  • 250 g cherry tomatoes
  • 1 brown onion, quartered
  • 1 clove garlic
  • 400 g arborio rice
  • juice from lemon (1/3 cup)
  • fresh basil leaves (1/3 cup), crushed
  • 50 g Parmesan cheese, grated
  • 1100 g water

Recipe's preparation

    Method
  1. Heat half the oil in a large, heavy-based saucepan over medium-high heat. Add zucchini and tomatoes. Cook, stirring, for 2 to 3 minutes or until lightly browned.

     

    Add onion and garlic to TM bowl and chop for 2 seconds on speed 6.

     

    Add oil and saute for 2 minutes at 100 on speed 1 with MC off.

     

    Add rice and wine into TM bowl and saute for 2 minutes at 100 on Counter-clockwise operation"Counter-clockwise operation" + speed 2.

     

    Add stock, lemon juice and water cook for 17 minutes at 100 on Counter-clockwise operation"Counter-clockwise operation" + speed 2.

     

    Pour into Thermoserver and stir through cherry tomatoes, zucchine, parmesan cheese and basil. Season with salt and pepper to taste. Allow to rest for at least 5 mins before serving.

    Used just one tablespoon of my vegetable stock which is not full blown in salt anyway. I also used lots of different vegetables. This was a very nice meal. I loved the lemon in the rice - that worked really well.Thanks for the recipe.

    Delicious.... But a few tips. As mentioned above used water instead of wine as it may suggest. Tweaked a little to taste, way less Stock otherwise too salty... Added more garlic and tomatoes and 1x less zuccini.... 

     

    Thank you for a delightful dinner reciepe... Is on my list of love's!

    Very nice, thanks.  Kids loved.  The ingredients list has water as the only liquid yet the instrutions say to add wine. Also would be handy to suggest people grate the parmesan as the first step. Will make again tmrc_emoticons.)
