Ingredients

Rich Vegan caramelised onion pasta

  • 1 packages spaghetti, No. 3 or 5 work well
  • 600 g brown onion, Thinly and uniformly sliced
  • 2 level tbsp olive oil
  • 2 level tbsp brown sugar
  • 2 level teaspoons balsamic vinegar
  • 4 cloves garlic, Thinly sliced
  • 150 g tomato paste
  • 1 packages sundried tomatoes, Roughly chopped
  • 2 level tbsp Nutritional Yeast Flakes
  • 2 level tbsp soy sauce, Tamari if gluten free
  • 2 level tbsp red pepper flakes, I use Korean ones as they’re less spicy
  • 2 heaped teaspoons Italian herb paste, Or dried herbs/oregano
  • .5 litre Reserved cooking liquid, From pasta, to add in increments
  • Salt and pepper, To taste

Recipe's preparation

    For use on the same day
  1. Add sliced onions, oil, vinegar, brown sugar and a touch of water to thermomix bowl. Cook Varoma temperature, 15 minutes, Counter-clockwise operation"Counter-clockwise operation" speed 1 with rice basket on top of MC hole.
  2. Add garlic and scrape down the bowl, untangling any long onion from the blades to ensure even cooking.

    Cook for a further 15minutes, varoma temperature, Counter-clockwise operation"Counter-clockwise operation" speed 1.

    If at the end of this step your onions are looking a bit pale, you can add a touch more sugar and oil and cook for a further 5 minutes.
  3. Add tomato paste, red pepper flakes and Italian herbs. Cook 100degrees, 15 minutes, Counter-clockwise operation"Counter-clockwise operation" speed 1.

    In the last 60 seconds of this cooking time, add your yeast flakes, soy or Tamari and chopped sundried tomatoes through the MC hole.

    You will be left with a nice, rich, thick paste. If you wish to store it for future use, skip to the next group.
  4. Cooking your pasta while the thermomix works on the above steps, reserve up to 500ml of the cooking liquid to use for thinning and thickening the paste into a sauce.

    When you are done, add your paste/sauce to a pan and over very gentle heat, add the pasta and while stirring, add the reserved water a few tablespoons at a time, stirring until all the pasta is evenly coated and the sauce is the consistency you like. I like a tacky sauce generously coating all pasta.
  5. For use at a later date
  6. Follow the recipe until the end of step 3 above. When your concentrate is ready, simply freeze in large ice cube moulds for single serves. Next time the craving for a rich, thick, creamy and delicious pasta strikes, simply thaw one or two cubes in a microwave and then, adding it to a sauce or fry pan, tong your pasta straight out of the cooking pot into said pan, the water that’s still clinging on will act as this reserved liquid in the above steps. I particularly like this option as my children like plain pasta, and sometimes it’s not worth wasting my time making a whole batch of red sauce on one day when I’m the only one that will be enjoying it.

Tip

I like to serve this with steamed greens such as broccoli or peas.

Please don’t be intimidated by the long list of ingredients or instructions. I promise this is one of those things where you read the recipe and make it once and you’ll make it again without thinking.

None of the ingredients are ones which if you add a little more or a little less (eyeball it) or substitute with something else will break the whole recipe. For example- I didn’t have any tomato paste OR herbs one day so I made it using half a bottle of pizza sauce instead. As long as you get that lovely thick richness of the onion and ideally a nice cooked down tomato base, it will all be delicious.

I loved it so much I had to figure out how to make it without babysitting my onions. Although her recipe for stove top is very easy and she includes lots of tips she’s already made easier, like the fast method for caramelising onions on the stove, it still took me longer than i have.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
