Ingredients
- 130 grams raw cashews
- 1 onion, peeled and halved
- 1 clove garlic
- 1 bunch Continental Parsley, small bunch, leaves only
- 2 tablespoons EVOO (extra virgin olive oil)
- 250 grams sliced mushrooms
- 600 grams water
- 650 grams sweet potato/ pumpkin, peeled and cut into 1cm cubes
- 60 grams breadcrumbs
- 100 grams Cheese mozzarella/tasty/parmesan
- 3 eggs

Preheat oven to 200℃ and line a large loaf tin with baking paper.
1. Grate cheese if you have not already done so by placing cubed cheese into bowl on SP7 for a few seconds. Set aside.
2. Finely chop cashews for 4 seconds on SP6. Set aside with cheese.
3. Chop onion, garlic and parsley for 3 seconds on SP6.
4. Add oil and sauté for 2 mins at 100℃ on SP1.
5. Add mushrooms and sauté for 2 mins at 100℃ REVERSE speed soft. Set aside to cool.
6. Place water into Thermomix bowl and close the lid. Place the cubed sweet potato (or pumpkin) into Varoma basket. Steam for 25 mins at VAROMA temperature at SP2.
7. Place steamed sweet potato to the side and empty the bowl.
8. Return the onion/herb/mushroom mix to the bowl and add the chopped nuts, cheese and breadcrumbs and mix together for 2 seconds on REVERSE speed 5.
9. Add eggs and mix together for 20 seconds on REVERSE speed 2.
10. Tip this mixture onto the sweet potato and fold them together gently. Season to taste.
11. Place mixture into lined loaf tin and place pine nuts in a line down the centre of the loaf.
12. Bake at 200℃ for 25 mins.

Outstanding. Toddler and family loved it. As I didn't have sweet potato in the cupboard, I used 200g carrot and 450g butternut pumpkin instead. Exceptional. Didn't have a loaf tin so halved the mixture into two quiche tins and I agree with a previous comment, it needed another 5mins cooking. Am planning to make it again tonight.
Have now made this several times, tonight with roast veges & gravy. Always good. Cheers!
Very yummy! I had to cook it a bit longer so it stayed together. Will definitely be making this again
Awesome loaf - make this for my vegetarian daughter ... slice it and freeze the slices and she gets this when we have meat. It's so popular that our other non-vegetarian daughter prefers it to meat, so I end up needing to make double batches!!!!

Do we use 3 types of cheese making the total amount 300g of cheese, or is it just 100g of either one of the mentions cheeses. Thanks
