Ingredients

African Curry

  • 1 medium onion, cut into quarters
  • 1 red capsicum, cut into four
  • 1 zuchinni, diced
  • 250 grams cauliflower florets
  • 2 cloves of garlic
  • 1 can Chickpeas, drained and rinsed
  • 1 can Ayam coconut cream
  • 1 tbsp vegetable stock concentrate
  • 1/2 Cup water
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1 pinch Ground coriander and paprika
  • 20 grams oil
  • 2 tbsp Corn Flour
  • 1/4 Cup of water

Recipe's preparation

    Let's go!
  1. Add garlic, onion and capsicum to bowl. Turbo 5 sec, twice. Add oil and butterfly. Cook for 3mins, 120*C Gentle stir setting"Gentle stir setting" Counter-clockwise operation"Counter-clockwise operation" .

    Add cauliflower, cook for 5mins, 120*C Gentle stir setting"Gentle stir setting" Counter-clockwise operation"Counter-clockwise operation"

    Add zuchinni, chickpeas, spices, stock, coconut cream and 1/2 cup water. Cook for 10mins, 120*C Gentle stir setting"Gentle stir setting" Counter-clockwise operation"Counter-clockwise operation" .

    Mix together cornflour and 1/4 cup water. Add to bowl. Cook for 1-2mins, 120*C Gentle stir setting"Gentle stir setting" Counter-clockwise operation"Counter-clockwise operation" , until mixture thickens.

    Serve with rice and a side of naan.

    Absolutely delicious although not hot enough for me, I added brown lentils & some sliced carrots too. If you want it hotter/spicier I suggest adding a chilli

    Is this dish spicey? I like heat in my food but the rest of my family doesnt!

    Fantastic! We've been investigating more vegetarian recipes and have had a lot of lentil or bean curries. This one just became a favourite. I served it with spiced cauliflower rice. Delicious, incredibly healthy and pretty good on the budget too.

    DEEEEEEEEEEEEEEEEEELICOUS!!!!! So easy and so yummy!! Swapped cauliflower for broccoli because that's what I had on hand and also added some chilli flakes for a little extra heat. Served with rice and Roti (http://www.recipecommunity.com.au/breads-rolls-recipes/roti-chapati-or-wrap/36679). Amazing flavour, highly recommend tmrc_emoticons.)

    I loved this. I haven't eaten it yet, but I've just had a taste and it's very nice. I modified the spices a bit - my curry powder is hot so I put less in. I didn't have chickpeas but put in blackbeans instead and they look good. I love the spices in this. I will be cooking this again.
