Ingredients

  • 50 g parmesan cheese cubed
  • 1/2 medium onion
  • 1 clove garlic
  • handful of parsley
  • 50 g olive oil
  • 2 Chorizo sausage (about 240g) cut length ways then sliced
  • 400 g arborio rice
  • 2 tbsp TM Veg Stock Concentrate
  • 1000 g water (or whatever takes you to the fill line)
  • 300 g Chicken Thighs diced
  • 100 g white wine

Recipe's preparation

    Method
  1. Place the parmesan into TM bowl & pulverise for 10 seconds Speed 9. Set aside.

  2. Place onion, garlic & parsley & chop for 3 sec on speed 6-7.

  3. Add oil & chorizo & saute for 2 mins at 100oC on Reverse Counter-clockwise operation"Counter-clockwise operation" + speed 1 with MC off.

  4. Insert Butterfly. Add rice & wine into bowl & saute for 2 mins at 100oC on Reverse [counterclock + speed soft.

  5. Add stock & water (make sure you only fill upto the fill line on the TM bowl!) and cook for 15 mins at 100oC on Reverse Counter-clockwise operation"Counter-clockwise operation"  + speed soft.

  6. Add in Chicken and cook for a futher 9 mins At 100oC on Reverse Counter-clockwise operation"Counter-clockwise operation"  + speed soft.

  7. Pour into Thermoserver and stir through parmesan. Allow to rest for around 10 mins.

Tip

You may like to throw a good couple of handfulls of spinach leaves in the bottom of the thermoserver before you pour in the risotto then stir before serving - yum! Left overs for lunch the next day are yummy!

    Made this last night for myself and 16 year old son, empty bowls and enough for tonight's dinner for both of us, followed recipe only difference I did was powdered veg stock, and added chicken at beginning of the cook time and put on for the whole 24 mins . I'd definitely make it again

    Delicious!! Thank you for the recipe. Was a little bit salty - may be the brand of chorizo. I'd suggest a little less stock conc. - can always add more 😀

    Pretty good
    I used chicken breast instead of thigh, added mushrooms when I added the chicken, cooked it for 10 minutes (not 9 - no big deal). Also used vegetable stock powder since I had no stock concentrate and, I'm embarrassed to say, garlic and chilli from a bottle. Still pretty good. Will definitely make again 👍

    I love this recipe but have substituted the white wine for red and added a tin of tomatoes and less water. Love it

    This was a delicious recipe, couldn’t stop eating it! I used chicken breast as I much prefer it over thigh & cooked it for 12 minutes rather than 9, it was perfect & not dry.
    I also added mushrooms & spinach for a bit of extra nutrition. Kids devoured it.
