Ingredients
Creamy Bacon & Vegetable Pasta
- 50 g parmesan
- 1/2 onion
- 1 clove garlic
- 6 sprigs parsley
- 1/2 red capsicum, Seeds removed - Roughly Chopped
- 100 g zuchinni, Roughly Chopped
- 30 g olive oil
- 400 g crushed tomatoes
- 400 g water
- 1 tbsp Vegetable Stock Concentrate (EDC)
- 2 tbsp crème fraiche
- 150 g bacon, Roughly Chopped
- 300 g short pasta, I used gluten free pasta

1. Place parmesan in mixing bowl & grate 10 Seconds/Speed 9 - set aside
2. Place Onion, Garlic & Parsley in mixing bowl & chop 3 Seconds/Speed 6 - scrape down sides of bowl with spatula.
3. Add Zuchinni & Red Capsicum & chop 3 Seconds/Speed 6 - scarpe sides down of bowl with spatula
4. Add Oil & Saute 3 Min/Varoma/Speed 1
5. Add Tomatoes, Water, Stock & Creme Fraiche cook for 10 minutes/100degrees/Speed 1
6. Add Bacon and Pasta & use the spatula to assist with covering all the pasta with the sauce. Cook 7-10 minutes/100degrees//
Place in individual serving bowls or thermoserve and top with parmesan.

You can also make this a gluten free meal by using Gluten Free pasta.

Yum ! I did meat balls instead of bacon ! Kids loved it
Great recipe, used fresh tomatos instead of tinned, loved it, will make again
Great recipe ... kids loved it. I only added half the parmesan and used pouring cream right at the end ...i also pan fried the bacon before adding it to the thermomix
