Creamy Chicken Fettucine Carbonara
- 15 g olive oil
- 300 g fettucine Pasta
- 100 g white wine
- 1 tablespoon vegetable stock conc
- 1 onion
- 2 clove garlic
- 550 g Chicken thigh fillets, cubed
- 160 g mushrooms, sliced
- pepper to taste
- 3 Rashers of Bacon, diced
- tsp Oregano (dry), or fresh if you have it
- small handful parsley
- Parmasen Cheese, shaved with a peeler
- 450 g water
- 250 g cream

- 1. Chop garlic & onion & parsley (& add in oregano if using fresh oregano) 3 seconds on speed 7. Add olive oil & diced bacon. Saute on Varoma for 3 mins speed 1 "Counter-clockwise operation" .
Place all remaining ingredients (except mushrooms ) Break pasta in half & push into liquid. Cook on 100 deg "Gentle stir setting" "Counter-clockwise operation" for 10mins .
Add in mushrooms & cook on 100deg for further 15 mins "Counter-clockwise operation" "Gentle stir setting" or until thick & creamy & chicken is cooked.
Shave some Parmesan cheese onto top & pepper to taste when serving.
Tip
Put your pasta into your Thermoserver for a few mins to absorb the liquid if any. You could also put baby spinach in the bottom of your Thermoserver to mix through your pasta.

I just made this recipe and YUM! 😋 I made heaps of alterations though after reading comments. I followed recipe correctly at the start,
I did Step 1 correctly.
I then proceeded with Step 2 - I added in everything except for the chicken, pasta and the water (I used a full bottle of cream instead) cooked all ingredients for same as above 100 deg "Counter-clockwise operation" "Gentle stir setting" for 10mins
After that I repeated that step again, and cooked for a further 10 mins as it was still watery..
Meanwile - I got a small saucepan and cooked the diced chicken on the stove.
Once cooked. I got a larger saucepan, added in cooked chicken and the sauce from thermomix. Cooked on heat 7 on the stove. And let it simmer for 15 mins as it was still quite runny. - stir occasionally
After simmering - the sauce was beautiful and thick Cooked the pasta separately- them added into the carbonara sauce once cooked, stired around with thongs and added in a little bit of pasta water to the sauce (about 1/2 cup)
Mainly because I over simmered my sauce by an extra 5-10mins so mine was extra thick and I need that extra pasta water to help.
And stirred around - was so amazing !!!!! Will make again exactly how I've done it! It was like a restaurants ! 😍😍
Taste is there, but too gluggy. Not creamy or saucey at all.
I cooked this tonight, I must say I was a little disapointed, I ended up cooking pasta seperately because in the past with a pasta dish it's always gone gluggy. I decided not to add the white wine, and I think this is where I made the mistake. Was EXTREMELY watery, and had no flavour....So sad....My fault, but even in saying that, either way it was really watery. Is that normal?

MrsLizTaylor: I haven't had the egg scramble but i cooked it last night & really don't think we need the egg I know that is the traditional thing of a carbonara but I will take it off the recipe
medmonds27: Sorry that happened to you maybe your chicken was cut up too big. I cooked the recipe again last night & will adjust it. I am changing the chicken to thighs so it can cook longer & not be dry
Cooked the chicken in small pieces for 5 mins as per the recipe, but was definitely not cooked through properly. Repeated the step again for another 5 mins and it still wasn't cooked. Repeated a third time for another 5 mins and the cream curdled and the chicken still looked a bit suspicious. Complete disaster for us and I didn't want to risk eating the end product as I'm pregnant.
