Ingredients
- 1 brown onion, halved
- 2 garlic cloves, peeled
- 1 zucchini, roughly chopped
- 1/2 red capsicum
- 1 large flat mushroom, halved
- 6 sprig fresh parsley or basil
- 100 g pure cream
- 400 g water
- 50 g passata or tomato puree, or 1 fresh tomato, chopped
- 1 tbsp Vegetable stock paste
- 1 chorizo sausage, sliced
- 300 g spaghetti
- 1 baby spinach, big handful or two
- Grated Parmesan Cheese, to serve
- cracked pepper, to taste

Place garlic & onion in the bowl. Chop Speed 7 for 3 seconds. Scrape down the sides. Saute for 2 mins at 120 degrees on Speed 1.
Add zucchini, capsicum, mushroom, parsley or basil and chop for 5 seconds on Speed 7. Scrape down and saute for 2 mins at 120 degrees on Speed 1.
Add cream, water, tomato passata or chopped fresh tomato and stock paste. Cook for 7 mins, 100 degrees on Speed 1.
Add sliced chorizo and cook for 2 mins, 100 degrees on Speed 1 on Reverse "Counter-clockwise operation" .
Break spaghetti in half and place in the bowl. Make sure everything is submerged. Cook for 6 mins, 100 degrees on Speed 1 in Reverse "Counter-clockwise operation" .
Place a large handful or two of baby spinach in the bottom of the Thermoserver. Pour your pasta and sauce into the Thermoserver to rest for a few minutes. Stir it the pasta after resting to make sure the wilted spinach is evenly distributed.
Serve with parmesan cheese and cracked pepper to taste.
Tip
This recipe has been tested in the TM 5. I believe it would also work in the TM 31, but proceed with caution. When sauteeing use Varoma temperature, rather than 120 degrees.
Grate your parmesan cheese before beginning.

This is a family favourite! Absolutely love this recipe. Hubby always asks me to add more Chorizo thou.
Delicious! I loved the chorizo in it, added the best flavour!
I omitted the cream and added an extra 200ml of water and pasta was perfect.

Very quick & tasty!! Added a splash of white wine and extra fresh herbs, left out the onion. Did the chorizo separatley in the air fryer.
