Ingredients
Carbonara Sauce
- 1 chicken breast, Diced
- 200 grams mushrooms, Sliced
- 250 grams bacon, Diced
- 1 bunch Shallots (Green Spring Onions)
- 1 clove garlic
- 2 eggs
- 500ml thickened cream
- 40 grams Parmesan cheese, Grated
- 1 package Fettuccine, Cooked

Cook Fettuccine to packet directions while the sauce is cooking.
Place chicken, bacon , crushed Garlic and chopped shallots to a fry pan or airfrier and fry until cooked and browned.
HINT - you can chop the garlic by running your empty Thermomix on Speed 5 and drop the garlic clove in through the hole in the lid. Leave the blades spinning for a couple of seconds then stop, remove lid and scrape down sides.
To make the sauce:
Break 2 eggs into TM Bowl and beat Speed 4, 10 seconds.
Add cream and cheese and cook 10 min, 90 deg, speed 1.5 "Counter-clockwise operation"
When the chicken etc is cooked, add to the sauce and heat through (if the sauce has already finished cooking) for a few more minutes, 90deg, Speed 1.5 "Counter-clockwise operation"
Place drained pasta into your thermoserver and sitr through the sauce.
Top with extra Parmesan.

Great meal, easy recipe, children loved it too, will be our go to carbonara! I didnt have quite enough cream only 400mls still worked great.
Has anyone doubled this recipe?
Empty bowls at the end of a meal is always the best indication.
I just made this very yummy....... but one thing I'm not sure if this was meant to happen but my egg scrambled???

LOVE LOVE LOVE!! This was great. I'm a cheese fenatic so doubled the Parmesan and added plenty of black pepper and parsley when I stired everything together. Great recip . Thank you
