Ingredients

  • 50 grams Parmesan cheese, cubed, 3cm cubes
  • 3 cloves garlic
  • 50 grams pine nuts
  • 250 grams Spinach Leaves, in pieces
  • 2-3 sprigs basil
  • 2-3 sprigs parsley, leaves only
  • 1 tablespoon vegetable stock (EDC)
  • 50 grams olive oil
  • 100 grams water

Recipe's preparation

    Spinach Sauce
  1. Place Parmeson cheese into mixing bowl and grate

    10 sec/speed 10.

    Transfer into a bowl and set aside.

  2. Place garlic, parsley, and fresh basil into mixing bowl and chop

    3 sec/speed 7. Scrap down sides of mixing bowl with spatula.

  3. Add Spinach leaves, vegetable stock, Olive Oil, water  and

    chop 5 sec/speed 5

     Scrape down sides of mixing bowl with spatula.  

     Repeat chopping if neccesary until desired consistency

     is achieved.  Transfer into a Thermoserver or bowl.

  4. Cooking Pasta
  5. No need to wash bowl

    Place 1200 g water into mixing bowl and bring to boil

    10-12 min/100c/speed 1

    Add 400g penne pasta through hole in mixing bowl lid and cook 

    time indicated on package/100c/Counter-clockwise operation"Counter-clockwise operation" /speed 1 

    or until al dente

     

  6. Drain pasta and add to Thermoserver mixing through spinach sauce

    To finish sprinkle with grated parmesan cheese

Tip

Nuts can be removed

The maximum quantity of pasta that can be cooked at any one time if 500g.

Spaghetti can also be used.  Will initially stick out of the hole in mixing bowl lid, then drop into the mixing bowl as it softens.

If water bubbles up into the mixing bowl lid while pasta is cooking, add 1 tsp oil or butter to the cooking water to reduce frothing.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
