Ingredients

Risotto

  • 50 g parmesan cubed
  • Rind of 1 Lemon
  • 1 clove garlic, extra
  • 300 g Raw Prawn Meat
  • 1 clove garlic
  • 1/2 brown onion
  • 30 g olive oil
  • 350 g arborio rice
  • 100 g white wine
  • 1000 g water
  • 2 tablespoons TM vegetable stock
  • 250 g asparagus spears, halved lengthwise, cut into 5cm lengths
  • salt and pepper to taste

Recipe's preparation

    Method
  1. - Place parmesan into mixing bowl and grate 10 sec / speed 9. Set aside.

    - Place lemon peel and garlic clove into mixing bowl and mill 10 sec / speed 10. Mix this mixture through prawn meat in separate bowl and set aside/refrigerate.

    - Place garlic and onion into mixing bowl, chop 3 sec / speed 7.

    - Add oil, saute 2 min 30 sec / 100 deg / speed 1.

    (Optional: insert butterfly now)

    - Add rice and wine, saute 2 mins / 100 deg / Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

    - Add water and stock concentrate, cook 14 mins / 100 deg/ Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting"

    - Add prawn meat and asparagus lengths, cook 4 mins / 100 deg/ Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" .

    - Pour into thermoserver immediately, season with reserved parmesan, salt and cracked black pepper.

     

Tip

If using whole raw prawns, you need about 550g prior to peeling and de-veining.

Is nice with some cherry tomatoes added at the same time as asparagus and prawns, but be careful not to overload your bowl.

    Beautiful recipe. I used a can of asparagus spears and squeezed a few more prawns in. I also used lime zest from a small lime as I didn't have a lemon. Enjoyed by all and will definately make again. Thankyou

    Have made this a few times now and it's always good! Cooked up some garlic/lemon prawns to have on the side and put half the lemon/garlic mixture on the prawns and half in the risotto. I also added mushrooms as we had vegetarians to cater for!

    beautiful flavours! Would probably not add as much lemon rind maybe only half and not as much water but still a good meal!
