Ingredients
Springtime Vegetable Pasta
- 1 clove garlic
- 1 leek
- 2 carrots
- 20 grams Grapeseed Oil
- 1 tablespoon Vegetable Stock Concentrate (EDC)
- 600 grams water
- 250 grams pasta, I use strozzapreti
- 1 corn cob, kernels only
- 1 - 2 zucchini, shaved or grated (for garnish)
- 100 grams frozen peas

Place garlic, leek and carrots into TM bowl, chop for - 5sec/speed 7.
Add oil and saute with MC off for - 3min/Varoma/speed 1.
Add vegetable stock and water and cook for - 5min/100/speed 1.
Add pasta and corn and cook for - 15min/100/"Counter-clockwise operation" "Gentle stir setting" .
Add peas and pour into Thermoserver to rest for 5min. Add shaved raw zuchinni and serve!
Easy Peasy One Pot dinner
Tip
You can grate some parmesan to add to your pasta or shred some cooked chicken and add to stir through.
I use strozzapretti pasta for this dish which takes between 15 to 20min to cook. Please follow the packet directions for cooking time and adjust as necessary.
