Thai chicken curry risotto

  • 1 --- brown onion
  • 3 cloves garlic
  • 10 g Minced Ginger
  • 1 carrot
  • 1 red capsicum
  • 500 grams chicken breast
  • 3 heaped tbsp Thai red curry paste
  • 270 g pineapple pieces
  • 300 g water
  • 30 g chicken stock paste
  • 20 g lime juice, freshly squeezed
  • 100 g cherry tomatoes
  • 1 tbsp brown sugar
  • 1 tbsp soy sauce
  • 20 g oil
  • 1 bunch bok choy
  • 10 sprig fresh basil
  • 300 g arborio rice
  • 200 g coconut milk

Recipe's preparation

  1. Place onion garlic and ginger in bowl and dice 3sec speed 7 mc on.
    scrap bowl and add oil and sauté for 3mins 100 speed 3 mc off.
    add carrot and capsicum dice 3sec speed 7 mc on. Add butterfly add all other ingredients except lime, tomato, basil,bok choy, sugar and soy 17mins 100 degrees reverse speed 1. Place basket on top to help with splashing.
    Place basil and bok choy in thermo server. Add all other remaining ingredients 4mins 100 degrees reverse speed 1.
    Put in thermo server for 5mins and enjoy
