Ingredients

  • 5 cloves garlic
  • 8-10 Chillies, Deseeded if preferred
  • 30 grams ginger, peeled
  • 1000 grams ripe roma tomatoes, quartered
  • 50 grams fish sauce, or Tamari for anyone with fish allergy
  • 200 grams red wine vinegar
  • 625 grams sugar

Recipe's preparation

  1. Put garlic, chillies and ginger in mixing bowl - Blitz for 8 Seconds speed 9

  2. Put tomatoes in mixing bowl and chop for 30 seconds speed 10.

  3. Put all other ingredients in bowl and cook on Varoma Temperature for 40 minutes Speed 1.5 using basket instead of Measuring cup on top.

  4. Check and if necessary,  increase cooking time in 5 minute increments until desired consistency is met.

  5. Pour into jars, using TM5 lid as a funnel to make sure overflows end up in the jar with the jam.

Tip

To check if your jam is the right consistency, put a tsp on a cold saucer (thats spent 10mins in the freezer). Allow to cool.  When pushed in if the top wrinkles, your jam is done to perfection.  

 

I don't worry to much about this, because i like the consistency of this a bit different to fruit jams.

I use this on my husbands sandwiches to give a bit of a kick.  

Also delicious on steaks, and anything really.

    I've made this twice. First time I didn't have tomatoes so substituted with canned ones. DON'T DO IT! It boiled over and was far too runny.

    Second time I used fresh tomatoes, subbed the 200g vinegar for 50g white wine vinegar and 50g apple cider vinegar (I was conscious of the amount of liquid, considering my first attempt), increased cooking time by 15 mins and it was a MUCH better consistency.

    Wow, delicious! Medium heat with 8 large chilli with seeds left in. I had to cook a lot longer and then added a tablespoon of arrowroot mixed with water to set it

    Tasites really good. I used 10 chillies and left the seeds in. Next time I would use jam setting sugar to make it a little thicker.
