Ingredients
Chimchirri
- 3-5 cloves garlic
- 1/2 brown onion
- 2 cups of parsley and/or coriander, firmly packed
- 1-2 sprigs oregano, fresh, optional
- 2 tablespoons red wine vinegar
- 1 tablespoon lime juice
- 1/2 to 1 teaspoon dried chilli flakes
- 1/4 to1/2 cup olive oil
Butter
- 500-600 grams Full Fat pouring Cream, (whipping)
- 500 grams water, chilled

1. Add Garlic and onion and chop speed 7 for 4 seconds
2. Scrape down bowl and repeat step 1 to achieve finer consistency
3. Put in Parsley, coriander and oregano (if using) and Turbo for
1-2 secs (scrape down sides and repeat until you get fine but not pureed consistency)
4. Add vinegar, lime juice, chilli flakes and olive oil and "Gentle stir setting" "Counter-clockwise operation" for 10 secs until well combined
5. Place in sterilised jar, making sure it is covered with Olive Oil and store in the fridge
(will keep for up to 3 weeks)
1. Make TM butter per instructions from The Everyday Cookbook (EDC)
2. Use half portion of the butter for this recipe
1. Place the half quantity of butter along with 30-50 grams of the Chimchirri into the bowl and mix for 20 seconds, "Counter-clockwise operation" speed 2.
2. Place onto glad wrap or baking paper and roll into a log
3. Refrigerate until ready for use

Chimchirri works well as a marinade for Chicken, Beef or Lamb
It can also be used as a sauce / side dish
