Recipe's preparation

    Prepare the fruit
  1. Use a manolin to slice the fruit as thin as you can without the slices coming apart. (If the fruit has a thick white pith use a peeler to peel away the outer rind and slice thinly and then slice the flesh)

  2. Cut the slices into quarters

  3. Weigh the fruit into a bowl and cover with water weighing the water. The water should not weigh more than the fruit, around 3/4 of the weight of the fruit.

  4. Cover and leave overnight to soak.

  5. Making the Marmalade
  6. Closed lid"Closed lid" Use a large ladle to put the fruit and water into the Thermomix. The largest batch I have done was 700g.

  7. Add the same weight amount of sugar that you did fruit.

  8. Put the pid on without the MC. Put the simmer basket in place on top.

  9. 45-60 minutes, 100 degrees Counter-clockwise operation"Counter-clockwise operation" sp 1. This stage is to soften the peel. Put a saucer into the freezer

  10. 10 minutes varoma Counter-clockwise operation"Counter-clockwise operation" sp1.

  11. Put a small amount of jam onto the saucer and drag your finger through it once cooled. If the channel remains then the marmalade is ready. If not cook again for 5 minutes Varoma Counter-clockwise operation"Counter-clockwise operation" sp1. Repeat this step until your marmalde is beginning to set. Be careful not to over cook as when it cools it wont spread.

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
