Ingredients

Pickles

  • 1000 grams cucumbers, Thinly sliced
  • 2 onions, Thinly sliced
  • 60 grams pink salt
  • 100 grams water

Pickling juice

  • 440 grams white sugar
  • 215 grams white wine vinegar
  • 215 grams white vinegar
  • 5 grams whole yellow mustard seeds
  • 2 heaped tsp Chopped fresh dill
  • 1/4 tsp ground tumeric
  • 1/4 tsp cayenne pepper

Recipe's preparation

    Cucumbers
  1. Slice cucumbers and onions thinly. soak in the water and salt mixture for at least 3 hours (I often leave mine over night). Turn once during this time.

  2. Drain well (do not rinse)

  3. Pickling Juice
  4. Add rest of ingredients to Closed lid"Closed lid" , 15 minutes 95 degrees speed 2

  5. Add cucumbers and onion, place jars in varoma and 10 minutes Varoma speed 1 Counter-clockwise operation"Counter-clockwise operation"

  6. Pour pickles straight into hot jars and seal immediatley.

  7. Eat any leftovers with cheese and enjoy

Tip

Add extra stalks of dill and or chilis to the jar before pouring the pickles!

    This is absolutely dillicious!!! I constantly make these (about 2-3 times per year), especially when telgraph cucumbers are on special. You only need 3. I then add fresh chilli whole when putting them in the jar. They are a hit with a particular friend, and the longer the chilli stays in the jar, the hotter it gets-just the way he loves it!
    I do cut back on the sugar by about 1/3 and add extra tumeric as I grow it. Thank you for this great recipe.

    Loving this recipe. I’ve made it a few times since Oct 2019 and in large batches since then. My family cannot get enough of these, they are that tasty! I don’t add the dill but whole peppercorns instead. Also tested it with a reduced amount of sugar and works well.

    I did a half batch as a tester but did not include dill, added whole peppercorns instead. My family loved them!! It’s now on request as a Christmas present. Thank you for a great recipe.

    I gave this a go, great recipe. I added some fennel that I had left over in the fridge.
    Can you confirm for me if you kept the same heat setting in step 4 as you did in step 3 please?

    Don’t waste the leftover juice from this recipe. We use it in dishes like Family Beans, Vege Sausage Rolls and Salad dressings etc.

    I ended up planting four cucumber plants as they all sprouted from seed. Really unsure what to do with them all and then came across this. Husband and I are hooked on it - so nice with cheese, on sandwhiches, burgers etc. Hubby doesn't like fresh cucumber much but said i need to plant four plants next year too ! Have made three batches so far this year.

    Its only 100grams to aid in the salt drawing out the water during the marinating process, this gets emptied out afterwards

    Once the marinating process is done the cucumber mass will have reduced. If it's still too much for the bowl just do it in two batches. Hope that helps!
