  • 1 large mango de-pipped
  • 1 garlic clove
  • 250 g Rice Bran Oil
  • 1/2 tsp Whole grain mustard
  • 1 egg
  • 2 tbsp white wine vinegar
  • salt & pepper

Recipe's preparation

    Mayonnaise
  1. Add cilli & garlic to the TM bowl & chop for 3 secs, speed 7

    Scrape down the bowl & redo if the chilli needs to be chopped smaller

    Add the egg, mustard, mango, vinegar, salt & pepper

    Mix for at least 20 secs, speed 4

    While the blades are still turning on speed 4, with measuring cup in place, pour the bran oil into the lid, allowing it to slowly trickly through under the MC. If you wanted a bit more mayo, you can fill the lid to the rim & keep the MC down by holding your finger on it.

    It will take a few minutes for all the oil to seep under the MC. Once done, using your spatular, make sure you scrape all the oil through the opening of the lid.

    Your mayo should be thick & delicious. Taste to check if you need more salt.

    It will continue to thicken a bit in the fridge.

    For those from South Africa, it has a sweet perinase taste!! Just divine

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     I've made this so many times.
    Great accompaniment with prawns.
    Makes a lovely gift and so easy.
    I experimented yesterday and tried it with mango chunks that I had frozen and It turned out fine.
    I just added the mango after chopping the chilli and increased the speed until it became like a frozen fruit ice and then completed the recipe. Turned out great and chilled down quickly for use.

    Really delicious flavour but not very thick - I am hoping it will thicken some more with refrigeration. Next time, I will separate the egg and use the butterfly whisk like the EDC recipe and see if that makes a difference. Thanks for a yummy recipe!

    We had this with prawns for christmas lunch - used apple cider vinegar instead of white wine vinegar Delicious Used a TM31 no problems
