Pesto
- 50 grams parmesan, cubed
- 100 grams Cashews, lightly roasted cashews
- 3 cloves garlic, peeled
- 1 bunch basil, remove stalks – only use leaves
- 120 grams olive oil

Place parmesan and garlic into TM bowl and grate for 10 – 15 seconds on speed 8
Add nuts & basil – process on speed 6 for 10 seconds till smooth – Bowl may need to be scraped down and step repeated.
Turn to speed 4 and add the olive oil, slowly until combined well with other ingredients – 40 seconds.
Pesto
Tip
Variation is to add a handful of fresh rocket or baby spinach leaves along with the basil.
Great as a dip, as a pasta sauce, over vegetables.

Flavour is amazing. I added a couple of chillies to this and it added a nice punch!
I also added a few Sundried tomatoes and it was so yummy the kids (16&14) scoffed it down

Simple but so very tasty. Thanks for sharing! Has anyone tried freezing this sauce? Have a load of basil growing at the moment and would be great to pop into freezer for later on.
bit oily for a dip so will reduce oil next time but otherwise delicious and will do again as is with pasta.
