Ingredients
Sweet Potato & Carrot Dip
- 500 g Sweet Potato, peeled & cubed
- 1 Carrot, peeled & Cubed
- 100 g raw cashew, (or sunflower seeds for nut free version)*
- 1 clove garlic, peeled, (or 1 tsp dried garlic)
- 1-1.5 tsp cumin
- 1 tsp paprika sweet
- 1 tsp Himalayan salt
- 1 juice 1 lemon

1. Place cashew in mixing bowl and grind 10 sec/speed 9. set aside [if you like your dip to have chunky cashew bits, first pulse 1 sec/turbo and take 2 tbsp of the chopped cashews out, then proceed to grind the rest of the cashews).
2. add sweet potato, carrot to simmering basket and steam 12 mns/varoma/sp 1.5.
3. Drain excess water from mixing bowl and add cashew and all other ingredients. Blend 10 sec/speed 9 or until desired consistency is achieved. [optional: add the chuncky cashew bits and stir 3 sec/"Counter-clockwise operation" /speed 3]
4. taste and season with extra salt and pepper to taste

Tip
* If cooking a roast in the oven, roast an extra half sweet potato and a carrot and use them for the dip. omit step 1 of recipe
*you can cook sweet potato and carrot straight in mixing bowl too with 150 ml water. 12 mns/100C/sp 1.5. Drain excess water
* Add other spices like curry, chilli/cayenne, turmeric or coriander to your liking. In any case, always add plenty of (natural) seasoning and lemon juice to your dip to bring out all the flavours
* you can replace the cashews with sunflower seeds, a tin of Chickpeas or White beans.

I found this recipe quite confusing as I don't understand how the sweet potato can cook without water in the bowl. If there is water, how much?
Hi, I'm new to Thermie, do I need to add water to the jug when simmering the sweet potato and carrot?

This is so easy and delicious, I always roast the sweet potato first, takes literally seconds to whiz all together, and so much better than the bought stuff.
