Ingredients

Fresh Ingredients

  • 5-10 large red chillies, (or small if you like more kick)
  • 10 cloves garlic
  • 4-6 thumbs of ginger
  • 8 Kaffir lime leaves
  • 3 stalks lemongrass (white part only)
  • 2 bunches fresh coriander with stems

Sauce Ingredients

  • 250-300 g Sugar (white or raw)
  • 90 g apple cider vinegar
  • 45 g Asian fish sauce
  • 45 g Tamari Sauce.

Recipe's preparation

  1.  De-seed (or not if you like it hot) the chilies, peel the ginger and garlic.


    1. Place the chilies, garlic, ginger, lime leaves, lemon grass stems and coriander into the TM bowl blend to a coarse paste on speed 10 for 30 seconds. Scrap down the sides and blend another 20 seconds if necessary.


    2.  Add the sugar, cider vinegar, fish sauce and tamari and bring to a boil on speed 1 on Varoma temperature for 10 minutes.


    3. Blend on speed 10 for 1 minute (slowly turning the dial up to 10). Pour into sterilized jars and allow to cool before enjoying.
