Ingredients

Asparagus

  • 500 grams asparagus, green, Small
  • 500 grams water
  • 1 level teaspoon salt

Hollandaise Sauce

  • 4 egg yolks
  • 130 grams Butter, Cut into pieces
  • 1/2 juice of lemon
  • 1/2 level teaspoon salt
  • 50 grams water
  • pepper, black, To taste

Recipe's preparation

    Asparagus
  1. Peel & rinse  the asparagus & place in the varoma.

    Mix the water & salt in the bowl and place the Varoma in the bowl. 

    Cook for 20-25 minutes (depending on the size of the asparagus) at Varoma/speed 1.

  2. Place the asparagus in a reserved warm plate.

  3. Rinse the bowl with cold water and insert the whisk attachment.

  4. Hollandaise Sauce
  5. Mix all the ingredients in the bowl, and heat  4 min/70degC/ speed 3.

  6. Mix without heat for 1 min/ speed 2

  7. Pour the sauce over the sparagus and serve immediately.

Tip

This dish is good with potatoes & meats in the tradition of  the Rhine region of France.

It would be also delicious with steamed fish &  potatoes.

    Lovely fresh flavour! It was my first attempt at making hollandaise. It was a little runny and didn't seem to thicken. I will try to make again though. Thanks for sharing!

    Actually, perhaps if you check a standard egg custard recipe that might tell you how long it can be kept

    Sorry I cannot say I have tried, but I cannot think why not. It woukd have to be refrigerated the whole time, though

    The last stage of the asparagus gives these instructions, to rinse with cold water (to cool it down) & insert the whisk (butterfly) attachment, before starting the hollandaise. It worked perfectly when I made it - did it work when u made it? I will edit it so it is a bit clearer!

    Really nice dish but when were you supposed to put the butterfly on for the sauce, at the beginning or near the end?

    I couldn't get my TM off the heat for the 2nd step - how do you do that?
