  • 2 eggs
  • 100g plain flour
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon natural yogurt
  • 1 teaspoon fresh dill

Recipe's preparation

    Margarita's Zucchini Fritters (Based on 28 by Sam Wood)
  1. Cut Zucchini into large pieces 

    Place in TMX bowl and chop 10 sec/speed 4 until coarse 

    Transfer to TMX basket and allow to drain

    Chop garlic 5 sec/speed 7

    Add egg, salt, pepper and flour to the bowl and combine 10 sec/speed 3 until a thick batter has formed

    Squeeze excess water from zucchini, return to bowl and mix for 1min/interval speed

    Heat oil in non-stick frypan on medium heat. Using a tablespoon, spoon the mixture into the pan (2 spoonfuls per fritter).

    Cook for 3 minutes on one side or until golden brown and then flip and cook for a further 2 minutes. Finish cooking remaining mixture. 

    Serve with fresh dill and natural yogurt
