Ingredients

  • 280 g Cooked Quinoa
  • 35 g plain flour
  • 2 shallots
  • 1 bunch fresh parsley
  • 10 g parmesan cubed
  • 1 egg
  • 1 tablespoon lemon rind
  • sea salt and pepper
  • 1 tablespoon olive oil for cooking

Recipe's preparation

    Method
  1. 1. Place parmesan in bowl and grate on spd 9 for 5 secs or until finely grounded.

    2. Add quinoa, flour, onion, parsely, egg, lemon rind, salt and pepper and mix on reverse, spd 3 for 15 secs.

    3. Shape mixture into balls.

    4. Heat oil in non-stick frypan and cook balls for 3-4 mins on each side.

    5. Serve with spinach, lemon slices and mayonnaise (optional).

    I cooked these for lunch today with some steamed veg. They are delicious and worth a try for the many vegetarians out there. I have made similar patties before I got my Thermomix, so much easier now. I'll make them regularly from now on. I prefer to flatten them though.
