Ingredients

Dressing

  • 2 centimetre ginger knob
  • 10 grams olive oil
  • 1 tablespoon fish sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon soy sauce
  • 40 grams lime juice
  • 1 tablespoon brown sugar
  • 1/2 chilli long red

Salad

  • 1/4 cabbage, roughly chopped
  • 1/2 onion, roughly chopped
  • 1 carrot, roughly chopped
  • 2 sprigs of coriander, stems removed
  • 2 sprigs of mint, stems removed

Recipe's preparation

    Salad
  1. Place all salad ingredients into mixing bowl and chop for 5-10 seconds, speed 4, or until cabbage looks evenly chopped.

    Set aside in serving bowl.

  2. Dressing
  3. Place ginger and chilli in mixing bowl and chop for 3 seconds, speed 7. Scrape down bowl. Add all remaining dressing ingredients and mix 6 seconds, speed 5.

    Pour onto salad, mix and serve.

    Nice, easy to make, tasty salad. We made two days in a row to use up the cabbage. Worked well being made a couple of hours ahead and left in the fridge until serving. The salad was a bit too salty first time so we halved the fish sauce the second time. Thank you for the recipe.

    I made this as a side to BBQ chicken and it was great, I couldn't find normal cabage and used chinese which if used again I would chop this by hand as it's alot softer than normal cabbage

    Husband was very impressed too and he is not a big salad eater

    Left dressing same but with salad I have added, 1/4 red capsicum Julianne,1/2 carrot Julianne,1/2 cup cabbage shred, 2tabs. Fresh parsley,1/2 packet rocket/ baby spinach,1/4 sliced red onion,tab fresh chive & coriander . Only enough dressing to coat,fry chicken fillets in olive oil add to salad mix through. Feeds 4.
