Ingredients

Biltong Soup

  • 80 g Butter
  • 160 g flour
  • 1 tsp ground black pepper
  • ½ tsp ground nutmeg
  • ½ tsp Ground Coriander
  • 300 g Milk
  • 3 tbsp beef / vegetable stock paste
  • 1000 g water
  • 160 g Cheddar cheese
  • 200 g Sliced biltong, available from some butchers or any South African shop
  • 80 g cream

Recipe's preparation

    Method
  1. Place cheese in bowl & grate 10sec / speed 5.5. Place in a separate bowl for later use

  2. Without cleaning the bowl, place 160g of the biltong in bowl & chop 15sec / speed 5.5. Add to bowl of cheese

  3. It is not necessart to wash the bowl. Place butter in the bowl & melt 3min / 100 degrees / speed 1

  4. Add flour & cook 3min / 100 degrees / speed 1

  5. Add pepper, nutmeg, coriander, milk, water & stock paste & cook 15min / 90 degrees / speed 3 with MC off (if you prefer a thinner soup, reduce time to 12min)

  6. Add cheese, biltong & cream & mix 1min / Counter-clockwise operation"Counter-clockwise operation" speed 2

  7. Serve immediately & garnish with remaining biltong slices

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
