Ingredients

Carrot, Ginger and Turmeric Soup

  • 1 portion brown onion
  • 2 cloves garlic
  • 30 g piece fresh ginger
  • 20 g piece fresh turmeric
  • 200 g sweet potato
  • 500 g carrot
  • 150 g celery stalk
  • 400 g water
  • 2 heaped tsp Vegetable stock paste
  • 400 g coconut cream
  • 2 sprig Fresh Corriander

Recipe's preparation

  1. Peel onion and garlic, place in Thermomix bowl with ginger and turmeric. Chop 3 seconds/speed 5. Add oil and saute for 3 minutes/varoma/speed 1. Chop sweet potato, carrot and celery into small chunks and place in bowl. Add water, vegetable stock paste and 300ml of the coconut cream. Cook 20 minutes/100 degrees/Gentle stir setting"Gentle stir setting" . Blend soup for 1 minute gradually increasing the speed from 6-10 or using the blend mode. Serve and garnish with reserved coconut cream, fresh corriander and chilli

Tip

For a bit of extra zing, try adding a squeeze of fresh lime just prior to serving.
