Ingredients

Soup

  • 30 g peanut oil
  • 1 clove garlic, large
  • 30 g lemon grass stem
  • 15 g ginger fresh
  • 5 stalks coriander, roots & stalks - keep leaves for garnish
  • 40 g Red Thai curry paste
  • 1 litre water
  • 10 g vegetable stock conc
  • 400 g coconut milk
  • 150 g Mushrooms sliced
  • 1 chicken breast diced
  • 1 tomato diced
  • 2 tsp fish sauce

Recipe's preparation

  1. Add to bowl garlic, lemon grass, ginger, corianderstalks/roots, chop 4 sec sp7.


    Add oil & curry paste, saute 2 min varoma sp2.


    Add water, stock concentrate & coconut milk, cook 15 mins varoma sp2.


    Add mushrooms, chicken & tomato, cook 5 mins varoma sp1.5 reverse.


    When chicken is cooked, add fish sauce mix 3 sec reverse sp2.


    Garnish bowls with coriander leaves.

Tip

Use simmering basket on top to stop splatters.

Water and stock concentrate can be replaced with chicken stock.

    Thanks, this was a lovely soup, exactly what i'd hoped for! I omitted the lemongrass and fish sauce as i didn't have it, then added bamboo shoots and julienne carrots. A lot of sauce, but it's so lovely and so simple.

    My son made this the other night, it went down a treat. Everyone enjoyed the flavours & wanted 2nd, would need to next time have to make this double so there is left overs. Way nicer than store brought, my sone was very please with himself for making this dish. Will keep this on our favour list.

    This was just delicious definetely a keeper. I saw others comment about the lemongrass. So I bruised it and added it in with the water and coconut milk so it adds the flavour without all the bits left in the bottom of your bowl. Thanks for a palate pleasing dish.

    Amazing flavours and very delicious, but agree with the other comments about the lemon grass/coriander stalks/roots not being cut up enough... I needed to increase the speed and chop several times for longer (scraping down the bowl inbetween). Also added a tsp of brown sugar, lime, extra garlic and a small onion.  The whole family loved it and will be making it again!

    This was a good recipe to build on.  I added chili garlic paste and lime juice.  The lime juice is needed to balance the flavours of this soup.  I also added green onions as a garnish with the cilantro leaves.

    Delicious Thai Soup. I halve the amount of Red Curry Paste when I make it as I don't really like my food too hot. This was perfect for me and my family. Thanks for sharing this easy to make recipe.

    Great recipe! Tasted delicious and very aromatic. Great Thai flavours and we will be making it again. I used red capsicum instead of the tomato but still tasted great.
