Ingredients

Grandma's Pumpkin Soup

  • 1/4 pumpkin, Cut into pieces
  • 1 potato, Large, Cut into pieces
  • 1 onion, Large, cut in half
  • 1 carrot, Cut into pieces
  • 500 g Liquid Chicken Stock
  • 1/2 tablespoons Nutmeg, Ground
  • 1 tablespoons brown sugar
  • 2 garlic cloves

    Instructions
  1. Add onion and garlic to bowl, 3sec - Speed7
  2. Add butter, pumpkin, carrot, potato. 15mins, 90deg, speed2 - Reverse blades
  3. Add nutmeg and brown sugar. Mix. 1min, 90deg, speed 2 - Reverse Blades
  4. Add Chicken stock liquid. Cook further 7mins, 120deg, speed2 - reverse blades
  5. Blend. 30secs, Speed7
  6. Serve while hot. Adding cream or sour cream if you wish

Tip

Everything is done in the one bowl, no need to simmer the pumpkin etc before making the soup or roasting the veggies in the oven. The thermomix will do it all in one
