Ingredients
Rachel's creamy 1kg vegetable soup (DF,NF)
- 1 Leek (white part only), roughly chopped
- 1 heaped teaspoons garlic, minced, or 2 cloves
- 20 g extra virgin olive oil
- 1000 g mixed vegetables, potato, pumpkin, sweet potato, celery, mushrooms, parsnip, zucchini, broccoli (diced into bite size pieces)
- 2 heaped teaspoons Vegetable stock paste
- 600 g water
- 100 g san remo pulse pasta spirals, you could use any other pasta
- 1 cans cannellini bean, canned, drained and rinsed

- Add leek to bowl, speed 7 for 3 seconds.
Scrape down bowl.
Add in garlic and olive oil, saute, speed 1, 3 mins, 120deg. - Into the bowl add in the mixed vege, vegetable stock paste and water.
Cook for 10 mins, speed "Gentle stir setting" , 100 degrees. - Put the pasta into the bowl and cook for a further 10 mins, speed "Gentle stir setting" , 100 degrees.
- Add in drained cannellini beans, and cook for 3 mins, speed , 3 mins.
- Optional - Serve with fresh bread, a sprinkle of parmesan cheese and some fresh parsley!

Tip
You can use whatever veggies you have in the fridge for this one really! Obviously the taste will change a little pending on what you use.
I find that the pulse pasta and cannellini beans give it a beautiful creamy texture.
This serves 4 large servings or 6 smaller servings!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
