Ingredients

garlic

  • 2 cloves garlic, fresh, peeled
  • 3 centimetres ginger, fresh
  • 1/2 red chilli, fresh
  • 1 litre hot water
  • 1 tablespoon Vegetable Stock Concentrate (EDC)
  • 40 grams soy sauce
  • 2 shallots/spring onions, trimmed and chopped
  • 150 grams mushrooms, sliced
  • 200 grams chicken thigh/breast, cubed
  • 2 stalks celery & leaves, roughly chopped
  • 1/2 red capsicum, sliced thinly
  • 5 leaves silverbeet, roughly chopped
  • 1 portion hokkien/udon noodles (220g), separated

Recipe's preparation

  1. Place garlic, ginger and chilli into mixing bowl and chop 3 secs/speed7.  Scrape down sides of mixing bowl with spatula.

  2.  


    Add hot water, stock, soy sauce, shallots, mushrooms to bowl and cook for 6 min/varoma/counter-clockwise operation/speed 1.

  3.  


    Add thigh/breast, celery and capsicum and continue to cook, 5 min/100 degrees/counter-clockwise operation/speed 1.


     

  4.  


    Lastly, add noodles and silverbeet (use spatula to push noodles and silverbeet down into soup) and cook 3 min/100 degrees/counter-clockwise operation/speed 1.

    Quick easy soup- thank you. Next time I'll add more chicken and leave out the capsicum as it's just not my thing. I think you could add any vegetables though. Great base flavour.

    Quick and easy! and substituted chicken with a chopped up omelette and it was great...next time id add slightly less soy as i found it a bit salty, otherwise a winner!
