Ingredients
- 1/2 leek, white part only, chopped roughly
- 1 onion, halved
- 2 cloves garlic
- 1/2 red chilli fresh
- 1 teaspoon Cumin Powder
- 25 grams extra virgin olive oil
- 1/2 red capsicum, chopped roughly
- 1 zucchini, chopped roughly
- 1 carrot, chopped roughly
- 3 Celery stalks with leaves, chopped roughly
- 100 grams Mushrooms sliced
- 1 tin chopped tomatoes, 400 g
- 2 tablespoons Vegetable Stock Concentrate (EDC)
- 50 grams tomato paste
- 500 grams water
- 1 tin four bean mix, drained and rinsed

1. Add leek, onion, garlic and chilli to bowl and chop 3 sec/sp 7. scrape down bowl.
2. Add cumin and oil and saute 3 min/varoma/sp 1.
3. Add capsicum, zucchini, carrot and celery and chop 5 sec/sp 7.
4. Add mushrooms, tin tomatoes, stock, tomato paste and water and cook 15 mins/100°C//sp 1.
5. Add four bean mix to bowl using spatula to stir beans into soup. Continue to cook for 5 mins/100°C//sp 1.
6. Place cooked soup into Thermoserver to serve.
Tip
This soup is a pefect way to enjoy a good serve of vegetables.
A generous dollop of sour cream, cottage cheese or even a sprinkling of parmesan cheese goes perfectly well with the soup.

I made this for lunch, I swapped cauliflower in as didn't have red capsicum. I also used soup mix instead of tinned beans as that's all I had. I had to cook for another 10mins to allow the lentil mix to cook. It was yum thanks.
