Ingredients
- 1 onion, peeled and quartered
- 1 chili, remove seeds (Optional)
- 20 gram coconut oil
- 250 gram sweet potato, peeled and roughly chopped
- 150 gram Zuchini, roughly chopped
- 2 leeks, Roughly chopped, whites ony
- 100 gram celeriac, peeled and roughly chopped
- 1 tbsp Vegetable stock paste, (see basic cookbook)
- 500 gram Filtered Water (Cold)
- 1 can Coconut Cream (full cream), Separate some for serving

I'm cooking this todayRecipe's preparation
1-Place onion and chili in bowl and chop 3 seconds/speed7 then scrape side of bowl
2- Add Coconut Oil, saute 2 min/speed 1
3-Add Sweet potato, Leek, Celeriac,and Zucchini, chop 10sec/speed7, scrape sides and Saute 5 min/speed 1/Varoma
4-Add Veg stock paste and water, cook 30min/100Deg/Speed1
5-add Coconut cream , blend 1min/from speed 1 up to speed 9
Serve with a dollop of Coconut cream and a sprig of coriander
Season with salt and pepper (optional)
HOW TO MAKE
Tip
You can make this as hot or cool as you like, by simply increasing or decreasing the amount of chilli used.
If you want the dollop of Coconut cream when serving, put some aside from the can before adding to the soup at the end

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

This was delicious ! Definitely will do it again. In step 4 I poured boiling water, this way starts absorbing the different tastes straight away .
