  • 3 clove garlic, fresh, peeled
  • 3 centimetres ginger, fresh
  • 1000 g boiled water
  • 1 heaped tablespoon dried corriander, ground
  • 1 heaped tablespoon Vegetable Stock Concentrate (EDC)
  • 2 shallots/spring onions, chopped
  • 30 grams soy sauce
  • 10 grams fish sauce
  • 200 grams slow cook beef (like chuck steak), thinly sliced
  • 1 stick carrot, Matchstick sliced
  • 3 sticks Celery, sliced thinly

Recipe's preparation

  1. Place Garlic and Ginger into mixing bowl and chop 3 secs/speed7. Scrape down sides of mixing bowl with spatula.

  2. Add boiling water, stock, soy sauce, fish sauce, coriander, spring onions to bowl and cook for 6 min/varoma/Counter-clockwise operation"Counter-clockwise operation" /speed 1.

  3. Add Beef, and continue to cook, 30 min/98 degrees/Counter-clockwise operation"Counter-clockwise operation" /Speed 1.

  4. Add Carrots and Celery, and continue to cook, 30 min/75 degrees/Counter-clockwise operation"Counter-clockwise operation" /Speed 1.

  5. Pour soup and enjoy!

Tip

I made this as a slower cooked beef broth for my sick toddler. I took out the chilli as that would be difficult on sick little tummys.
I like veges crisp, but you can easily increase the temperature in step 4 if you like.
I served this up minus the meat for my sick toddler and included the meat for us parents. Yum all round!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
