Ingredients

Meatballs

  • 500 g chicken thighs cubed
  • 4 spring onions, roughly chopped
  • 1 bunch coriander
  • black pepper, to taste
  • 1 cm piece ginger, fresh
  • 1 tbsp fish sauce

Soup

  • 1 red chilli, deseeded, roughly chopped
  • 3 cloves garlic
  • 2 cm piece ginger, fresh
  • 1 tbsp olive oil
  • 1000 g chicken stock liquid
  • 400 g water
  • 2 star anise
  • 1 tbsp brown sugar
  • 2 tbsp soy sauce
  • 3 tbsp fish sauce
  • 1/2 lemon, juice of

Other

  • 200 g Rice Vermicelli Noodles
  • 1 bunch Bok Choy/Pak Choy
  • 100-200 g Other mixed veggies, eg. broccoli, carrots, cabbage, roughly chopped
  • bean sprouts, (to garnish)

Recipe's preparation

    Meatballs
  1. Place cubed chicken, spring onions, coriander, pepper, ginger and fish sauce into mixing bowl and press briefly 3-5 times/2 sec/Closed lid"Closed lid" Turbo.

     

    Form into small meatballs and place into Varoma.

  4. Without washing bowl, add garlic, chili and remaining ginger and chop 3 sec/speed 7.

     

    Scrap down sides. Add oil and sauté 3 min/100C/speed 1.

     

    Add stock, water, star anise, brown sugar, soy sauce and fish sauce and cook 6 min/90C/speed 1.

     

    Place Varoma in place and cook 12 min/Varoma/speed 1.

  5. Noodles & Veggies
  6. Place noodles into simmering basket and pak choy and other veggies into top level of varoma tray. Insert simmering basket and cook for a further 6 min/Varoma /speed 1. Stir through lemon juice into the soup before serving.

    Delicious! 

    Great recipe, easy to follow and full of flavour, I added too much chilli unfortunately and my kids didn't like it but we enjoyed it..

    This Soup was great - We left out the chilli as we dont like it that spicey and it was delicious!
