Ingredients

Peanut Satay Chicken

  • 1 tablespoon olive oil
  • 1 Brown Onion Halved
  • 2 cloves garlic
  • 2 teaspoons ground coriander seeds
  • 2 teaspoons ground cumin seeds
  • 1 teaspoon cayenne pepper
  • 1 teaspoon dried chilli flakes
  • 3 tomatoes, deseeded
  • 600 g chicken thigh fillets, roughly chopped
  • 1 Juice of lime
  • 250 g chicken stock
  • 250 g Peanut Butter
  • 1 bunch broccoli florets or snow peas, (optional)
  • cooked rice, to serve

Recipe's preparation

    Peanut Satay Chicken
  1. 1. Chop onion and garlic 3 secs / Sp 5. Add oil and spices and sauté 8 mins / 100C / Sp 3.

     

    2. Add tomatoes and chop 5 seconds / Sp 5. 

     

    3. Add the remaining ingredients except for broccoli/snow peas and cook for 22 mins / 100C / Counter-clockwise operation"Counter-clockwise operation"  / Sp 1, removing the MC for the last 10 minutes of cooking time to thicken the sauce, if desired.

     

    4. If using broccoli/snow peas add through the hole in the lid approx 4 minutes prior to the end of cooking time.

     

    Serve with rice

Tip

My kids eat this as written, but you can vary the amount of chilli and other spices to taste. If you are not regular eaters of spicy food, consider halving the quantities.

    Best satay chicken recipe.

    My husband who loves peanuts but hates satay loved the recipe. Full of flavour and froze well. Thanks for sharing!

    So delicious everyone had seconds. I added coconut cream instead of water and only 100g of peanut butter.

    This recipe is the absolute bomb!!!!

    I am super fussy with satay as if find many recipes are too bland. This has a perfect amount of kick (I added another fresh chilli). For those fussy eaters or kids I would recommend reducing the chili flakes and perhaps some of the spices....... for me it was spot on !!!!!!

    Next time im going to make my own peanut butter.

    So easy and delicious. I replaced the cayenne pepper with normal pepper and reduced the chilli in the dish.  I will be making this again!  Thank you

    Too easy! Took care with the heat as the previous comments did warn me! Used breast as that's what I had in and freshly made peanut butter from the thermomix community ! Fresh coriander to dress - delicious

    I've cooked for a 2nd time today & 1/2 all spices. Its much better for my family, but it still has a kick, at the end. YUMMO. Its a regular in our household. x

    This dish was amazing. However, it was very spicy. I ended up using coconut cream to "cool" the meal down as we are a very mild spice family. I will be making again & again, just cutting the quantity of cayenne & chilli flakes by 1/2 . Thank you for sharing.

    Jsutg made this tonight for dinner. This was delicouse husband found this a bit spice so next time I will half the spices so not to strong for him but my sister & I loved it, peanut sauce was nicely socaked up with roti bread. tmrc_emoticons.)
