- 1-2tbs vegtable stock edc

chop leek 2sec/speed7 scrape down add olive oil and cook 5mins/veroma/speed 2
add water and stock and cook 12mins/veroma/speed 2
puree going slowly from 1-9 for 1min
original recipe had 750 water but i reduced so you could puree safely add extra 100 at end of processing

Tip
healthy chef said you can add some fish or lentils for extra protein.the soup is rich in antioxidents,vitamin c,e,and beta- carotene,folate fibre
there is also a thai gremolata that you can add for extra zing i will add to community

I really enjoyed this soup! It was exactly what I was after. I might make a batch to freeze for lazy dinners and easy lunches. I used brocolli, silverbeet and celery in mine.
We both quite enjoyed this soup which we based on celery, zucchini and spinach. I wasn't sure from the method when the vegetables were to be added. The preparation steps mention the leek and the water and stock however doesn't mention the vegetables. Thank you for the recipe.
i just made this with kale, brocoli, celery and zucchini, think i will add some garlic next time, was a nice light dinner, i made enough to take to work for lunches!
great way to use up green vegies
I used two leeks and two cloves of garlic. Plus 120g red lentils (pre soaked). Cooked on Reverse speed 2 for 30 mins. I left the soup a bit chunky, it was delicious.
Beautiful creamy tasting soup! I used coconut oil.
