Ingredients
Italian Bruschetta
- 150 g cherry tomatos
- 1 red capsicum, Whole to be roasted
- 1 yellow capsicum, Whole to be roasted
- 50 g chorizo sausage, chopped
- 50 g basil
- 1 clove garlic
- 20 g olive oil
- 20 g homemade tomatoe relish
- to taste Salt and pepper

Preheat oven to 200 degrees.
Put whole capsicums on a roasting tray and drizzle with olive oil.
Place into preheated oven and roast for about 15 - 20 min
While capsicum cooks:
Add garlic and basil to bowl and chop 3 sec on spd 7
Add tomatoes and chop 2 sec on spd 5
Drain off juices using the steaming basket and set both mixtures aside.
Add in chopped chorizo sausage, 10 - 20g of olive oil and saute for 5 min 100 degrees "Counter-clockwise operation" "Gentle stir setting"
Gently chop sausage 2 -3 sec spd 4. Tip onto paper towel to drain. Rinse and dry bowl.
Once capsicums cooked place into a zip lock bag to sweat. Then peel skins and place into mixing bowl, gently chop 4 sec spd 4 (or use turbo until desired consistency).
Combine all ingreditents apart from the drained tomatoe liquid. Serve on homemade toasties or crusty bread.
How to make your delicious bruschetta
Tip
Use the drained tomatoe liquid as a dressing on your salads.
Create a yummy toastie topping by grating parmesan and garlic and grilling in the oven for 5 min before adding your bruschetta.
