Recipe's preparation

How to make the magic happen
  1. Preheat oven to 180 - 200 degrees.

  2. Top and tail zucchini, cut into large chunks.

Place zucchini and fresh herbs into TM bowl.

Blitz on turbo a few times to 'grate' the zucchini.

Empty into a bowl and squeeze out all the moisture from zucchini. Discard moisure, keep the pulp.

  3. Place zucchini and herbs back into TM bowl. Add remainung ingredients.

    Mix together 8 sec/Sp4-5/reverse.

Scrape down sides and repeat if not all combined.

  4. Tip out mixture onto a lined baking tray.  Make sure you line with baking paper!! VERY IMPORTANT! DO NOT USE FOIL!!!

Spread mixture out till it is about 1cm thick.

Place into preheated oven for approx 10 minutes.

  5. The tricky part....... I'll try to explain as best I can, please visualize in your mind......

Remove base from oven,  place another baking sheet on top.

Using oven gloved hands, slide one hand under base, lifting up base and both papers, carefully flip over onto new baking paper. Do this quickly but carefully, do not break apart the base.  Place back down on tray. Peel off top paper (which was the original paper).

Place back into the oven for another 10 mins.

  6. Remove from oven once more and add toppings.

Place into the oven for about 20-25 mins until the cheese melts and meats are cooked.

Tip

** I like to mix it up and add different herbs to add flavour to the base. The hoyts mixed herb pkt mix is another great alternative if you have no fresh herbs on hand.

** Mixture can be doubled easily to make a bigger pizza.

** I have attempted the base using coconut flour. It tasted a little 'gritty', but was edible. Have never made it with plain flour, I've only ever used wholemeal spelt flour.

** If the mixture is too dry add another egg, if it is too wet add some more flour. SIMPLES!!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Misskt77: Hi I was wondering what flour you used instead of the whole meal Spelt flour to make it gluten free? Thanks

**UPDATE**My gluten free son and I love this. To make two pizza bases, I double the entire recipe and add a small sweet potato (about the size of the zucchini) to soften the base. Not too much SP or it’s yuck. Love this so much

This is delicious and a refreshing alternative from the cauli bases which contain lots of cheese. Ive recently gone Paleo for health reasons so can no longer have normal pizza bases. I don't miss out on home made pizza night with this beauty. I've had to eat it with cutlery though as I can't quite get it crisp yet.

Very nice, for my oven I need to use the pizza setting to stop it going floppy. Will be a staple now

Thank you. Glad you enjoyed it enough to think it worthy of becoming a family favourite.

It's pretty popular in my house too!!

    Maryanne,

I have never weighed the zucchinis. I use average size ones you usually find at the supermarket. I don't have the luxury of growing my own gigantic fresh fruit and vege.

As I've quoted in the recipe,  if the mixture is too dry add more egg or too wet add more flour. It should look like a thick batter, not too runny.

Sorry i can't be more help.

Really tasty pizza base, not much difference taste wise from my normal pizza base but this one much healthier tmrc_emoticons.-). I used Plain wholemeal flour as I didn't have spelt and used 60g being heavyhanded pouring in and it worked out fine. I used my normal homemade pizza toppings and it was perfect. Definitly recommend and will be using everytime now as my pizza base tmrc_emoticons.-) Thank you
