Ingredients

  • 40 g Coconut Flour
  • 4 eggs, you may need an additional egg depending on the consistency
  • 120 g cooked pumpkin pulp
  • 1 teaspoon vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 120 g coconut milk
  • 2 heaped tablespoons sultanas, these are optional

Recipe's preparation

  1. Prepare your pumpkin ahead of time, I used butternut pumpkin. Cut it in half length ways, scrape out the seeds and place the halves flesh side down in baking paper on a cooking tray. Pour a small amount of water over the skin and put in to the oven for around an hour at 180. You'll know it's ready when the pumpkin is soft when you press on the skin.

    You can then scrape out all the pulp for use in this and other recipes!

  2. Throw in all the wet ingredients and blitz on speed 6 for 20 seconds. Throw in the dry ingredients and blitz on speed 6 for 10 seconds. Check the consistency, if it's too thick, add an extra egg and blitz for another 10 seconds.

  3. Cook your pancakes the same way you would any other pancake. The batter can be a little hard to handle so either make small pancakes, or use a sandwich press to cook both sides at the same time, this makes them easier to flip!
