Ingredients
Dough
- 30 grams caster sugar - or blitz your own
- 330 grams Milk
- 3 level tsp dried yeast or 30 g fresh
- 80 grams Butter, softened
- 1 level tsp salt
- 650 grams bakers flour
- 1 egg
Filling
- 150 grams Baby Spinach Leaves
- 150 grams feta cheese
- 75 grams pine nuts, toasted
Topping
- 1 egg, beaten
- 75 grams parmesan, grated

Place sugar, milk and yeast into TM bowl and heat 1 min/37C/Sp 1.
Add remaining ingredients and mix 10 sec/Sp 7 then knead 3 mins.
Transfer on ThermoMat end work into a ball. Wrap in ThermoMat and allow to prove for 30 mins.
Place spinach in TM bowl and chop 5 sec/Sp 5.
Add feta an chop 3 sec/SP 5.
Set aside.
Pre heat oven to 200C.
Rollout dogh to a rectangle approx 30 x 40cm.
Sprinkle over filling ingredients.
Roll up like a swiss roll and cut into 2.5cm wide sclls.
Place onto a tray lined with baking paper.
Allow to rise for 30 mins.
Brush tops of scrols with egg and sprinkle with parmesan cheese.
Bake for 25 - 30 mins until golden brown.

Tip
When cutting into scrolls on ThermoMat make sure you use your TM spatula NOT a knife.
If you do not have a ThermoMat transfer dough to a bowl then cover with a teatowel before proving.

These are yummy. I only cooked them for 12 mins and they were quite brown. Couldn't have let them go any longer.
