Ingredients

Muffins

  • 100 grams oatbran
  • 150 grams wholemeal flour
  • 150 grams raw sugar
  • 100 grams vegetable oil
  • 170 grams water
  • 750 grams fruit and vegetable, - your preferred combination of fruit and vegetables
  • 2 eggs
  • 2 teaspoons baking powder
  • 2 teaspoons mixed spice

Recipe's preparation

  1. Preheat oven 160 degrees (fan forced)


    Grease muffin trays or line with muffin/patty cake liners  


    Add preferred combination of vegetables and fruit (cut loosely) to mixing bowl (I use 2 carrots, 2 apples and a medium sweet potato)


    Chop at speed 5 for 5 seconds. Scrape down sides and repeat


    Add all other ingredients to the mixing bowl and mix counter-clockwise operation speed 3-4 for approx 20-30 seconds - or until completely combined


    Divide mixture by 18 in lined (or greased) muffin trays


    Bake for 35-40 minutes


     

Tip

These muffins freeze and thaw really well. Because they are such a moist muffin, they are prone to going mouldy in just a few days - even when kept in an airtight container. I tend to only keep out a few and freeze the rest to take out later as needed.
