Ingredients
Anya's Banana Bread
- 130 grams unsalted butter, softened
- 350 grams ripe bananas, approx 4
- 75 grams caster sugar
- 2 eggs
- 73 grams plain flour
- 73 grams linseed, ground
- 73 grams wholemeal flour
- 2 tsp baking powder
- 1 pinches salt
- 1 tsp bicarbonate of soda
- 2 tsp vanilla extract
- 100 grams yoghurt, good quality plain

- 1. Preheat oven to 180 degrees.
2. Grease a deep-sided loaf tin (25 x 10 x 11 cm) and set aside.
3. Put the linseed into the mixing bowl and grind, 20 sec/speed 10 or until it's a powder!
4. Place ripe bananas into mixing bowl and mash 5 sec/speed 6.
5. Add unsalted butter and caster sugar and mix 20 sec/speed 4. Scrape down sides of mixing bowl with spatula.
6. Add eggs and mix 10 sec/speed 4.
7. Add plain flour, ground linseed, wholemeal flour, baking powder, salt, bicarbonate of soda, yoghurt and natural vanilla extract and combine 20 sec/speed 4.
8. Pour into prepared loaf tin and bake for 50-60 minutes (180°C) or until a wooden skewer inserted into the centre of the bread comes out clean.
9. Allow to cool in tin for 30 minutes before turning out onto a wire rack. Serve warm or allow to cool completely before transferring into a sealable container until ready to use.

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
