Ingredients
Cookie Dough
- 180 grams almonds
- 50 grams Self Raising Flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 30 grams raw sugar
- 1 apple
- 50 grams Butter, or Coconut Oil
- 90 grams honey
- 1 teaspoon Vanilla Essence/Extract
- 80 grams Coconut
- 2 eggs
- 40 grams pepitas
- 100 grams walnuts

1. Preheat oven to 160C. Line 2 baking trays with baking paper.
2. Place almonds in TM bowl. Mill 8 sec/speed 8.
3. Add SR flour, baking powder, salt and raw sugar. Mix 5 sec/speed 4 to combine. Set aside.
4. Add apple to TM bowl. Chop 5 sec/speed 4.5.
5. Add butter, honey and vanilla essence. Melt 2 min/60C/speed 1.
6. Add all other ingredients, including reserved almond mixture, to the TM bowl. Mix 10 sec/"Counter-clockwise operation" /speed 3.
7. Scrape down sides. Mix 5 sec/"Counter-clockwise operation" /speed 3.
8. Place large spoonfuls of dough onto the baking trays. Bake in oven for 20-25 mins until golden brown.
9. Let cool on trays for 3-5 mins and then transfer to a wire rack to cool completely (if you don't transfer them off the baking paper, they will sweat and go soggy!).
10. Enjoy straight away, or if you can resist, leave to cool completely before transferring to an airtight container.
Tip
Don't have any walnuts? Use pecans or hazelnuts... or any other nut you like!
You can substitute the butter for coconut oil to make these dairy-free.
Feel free to add some sultanas or craisins as well - just reduce the amount of nuts and/or pepitas slightly.
